Ingredients

  • 1 ready-to-use pie crust (9-inch)
  • 3-4 ripe tomatoes, sliced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup mayonnaise
  • 0.5 cup shredded cheddar or mozzarella
  • 0.25 cup grated Parmesan
  • 1-2 tbsp chopped fresh basil or parsley
  • 0.5 tsp dried oregano
  • 1 small onion, thinly sliced (optional)

Steps

  1. Preheat oven to 400°F (200°C).
  2. Place tomato slices on paper towels, sprinkle with 1/2 tsp salt, and let sit 10 minutes to drain excess moisture. Pat dry.
  3. Lay pie crust in your pie plate and crimp the edges.
  4. In a bowl, mix mayonnaise, cheese, herbs, oregano, salt, and pepper.
  5. Layer half of the tomato slices in the crust. If using onion, add a layer of onions over the tomatoes.
  6. Spread half of the mayo-cheese mixture over the tomato layer.
  7. Add the remaining tomato slices, then spread the rest of the cheese mixture on top.
  8. Bake 25–30 minutes until the crust is golden and the top is bubbly and lightly browned.
  9. Let cool 10 minutes before slicing and serving warm or at room temperature.
