Ingredients

  • 1 lb fresh okra, trimmed and sliced into 1/2-inch pieces
  • 1 cup buttermilk (or milk with 1 tsp vinegar)
  • 1 cup cornmeal
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika (optional)
  • Oil for frying (vegetable or canola)

Steps

  1. Heat about 1/2 inch of oil in a large skillet over medium-high heat.
  2. Pour buttermilk into a bowl and soak the okra pieces for 5 minutes.
  3. In another bowl, mix cornmeal, flour, salt, pepper, and paprika.
  4. Remove okra from the buttermilk, shaking off excess, and dredge in the cornmeal mixture.
  5. Carefully place coated okra in hot oil and fry 3–4 minutes, stirring occasionally, until golden and crisp.
  6. Use a slotted spoon to drain on paper towels.
  7. Serve warm with your favorite dipping sauce.
