Ingredients

  • 3-4 firm green tomatoes, sliced 1/2 inch thick
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika (optional)
  • 2 eggs
  • 2-3 tbsp milk
  • Oil for frying (vegetable or canola)

Steps

  1. Heat about 1/2 inch of oil in a large skillet over medium-high heat.
  2. In a shallow bowl, combine flour, cornmeal, salt, pepper, and paprika.
  3. In a separate bowl, whisk eggs with milk.
  4. Dip each tomato slice first in the egg mixture, then dredge in the cornmeal mixture to coat.
  5. Carefully place coated tomato slices in the hot oil and fry 2–3 minutes per side until golden brown.
  6. Remove and drain on paper towels.
  7. Serve warm — alone or with a dipping sauce.
