Ingredients

  • 12 oz thinly sliced beef (ribeye or sirloin)
  • 1 small napa cabbage, chopped
  • 1 cup shiitake mushrooms, stems trimmed
  • 1 medium carrot, sliced
  • 1 block firm tofu, cubed
  • 1 small leek or 2 scallions, sliced
  • 0.5 cup soy sauce
  • 0.25 cup mirin
  • 2 tbsp sugar
  • 1 cup dashi broth (or substitute chicken broth)
  • 1 tsp sesame oil (optional)
  • Cooked rice or noodles, for serving

Steps

  1. Mix soy sauce, mirin, sugar, and dashi in a large pot over medium heat.
  2. Add beef slices and simmer 2–3 minutes to release flavor.
  3. Add cabbage, mushrooms, carrot, tofu, and leek.
  4. Bring to a gentle boil, then reduce heat and simmer 10–12 minutes until vegetables are tender and broth is rich.
  5. Drizzle sesame oil if using, then serve hot with rice or noodles.
