Ingredients

  • 12 oz (340 g) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 8 small flour or corn tortillas
  • 1 cup cooked rice
  • 1 cup cooked black or pinto beans
  • 1 ripe avocado, sliced
  • 1 lime, cut into wedges
  • 0.25 cup chopped cilantro (optional)
  • 0.5 cup shredded cabbage or lettuce (optional)
  • Salsa or hot sauce (optional)

Steps

  1. Preheat grill or grill pan to medium-high heat.
  2. In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Grill shrimp 2–3 minutes per side until pink and opaque. Remove and set aside.
  4. Warm the tortillas on the grill or in a skillet for 15–20 seconds per side.
  5. Assemble tacos by dividing grilled shrimp among tortillas. Top with avocado slices, cabbage or lettuce, and cilantro if using.
  6. Serve with lime wedges and salsa or hot sauce on the side.
  7. Plate with cooked rice and beans alongside the tacos for a full meal.
