
Grilled Shrimp Tacos
Ingredients
- 12 oz (340 g) large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 0.5 tsp cumin
- 0.5 tsp garlic powder
- 0.25 tsp salt
- 0.25 tsp black pepper
- 8 small flour or corn tortillas
- 1 cup cooked rice
- 1 cup cooked black or pinto beans
- 1 ripe avocado, sliced
- 1 lime, cut into wedges
- 0.25 cup chopped cilantro (optional)
- 0.5 cup shredded cabbage or lettuce (optional)
- Salsa or hot sauce (optional)
Steps
- Preheat grill or grill pan to medium-high heat.
- In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Grill shrimp 2–3 minutes per side until pink and opaque. Remove and set aside.
- Warm the tortillas on the grill or in a skillet for 15–20 seconds per side.
- Assemble tacos by dividing grilled shrimp among tortillas. Top with avocado slices, cabbage or lettuce, and cilantro if using.
- Serve with lime wedges and salsa or hot sauce on the side.
- Plate with cooked rice and beans alongside the tacos for a full meal.
