Ingredients

  • 3 cup milk
  • 0.5 cup sugar
  • 0.25 cup cornstarch
  • 3 large egg yolks
  • 1 tsp vanilla extract
  • 4-5 ripe bananas, sliced
  • 1 box (about 12 oz) vanilla wafers
  • Pinch of salt

Steps

  1. In a saucepan, whisk sugar, cornstarch, and salt.
  2. Gradually whisk in milk over medium heat and cook until mixture thickens, stirring constantly.
  3. In a small bowl, whisk egg yolks. Slowly whisk in a ladle of hot pudding to temper.
  4. Pour tempered egg mixture back into the pot and cook 1–2 minutes more until very thick.
  5. Remove from heat and stir in vanilla.
  6. In a serving dish or individual glasses, layer vanilla wafers, banana slices, and pudding.
  7. Repeat layers, ending with pudding on top.
  8. Chill at least 2 hours before serving so layers set. Serve cold.
