Classic Lattice Apple Pie

Ingredients

  • 2 pie crusts (store-bought or homemade)
  • 6 cup apples (Granny Smith, Honeycrisp, or mixed), peeled and sliced
  • 0.75 cup sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp butter, cut into small pieces
  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)

Steps

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss apple slices with sugar, flour, cinnamon, nutmeg, and lemon juice.
  3. Roll out one pie crust and fit it into a 9-inch pie plate.
  4. Pour the apple mixture into the crust and dot with butter pieces.
  5. Roll out the second crust and cut it into 1/2- to 3/4-inch strips using a knife or pizza cutter.
  6. Lay half the strips horizontally over the pie, then weave the remaining strips vertically to form a lattice pattern.
  7. Trim excess dough and crimp the edges to seal.
  8. Whisk egg with milk and brush lightly over the lattice.
  9. Bake 20 minutes at 425°F, then reduce heat to 375°F (190°C) and bake 30–35 minutes until crust is golden and filling bubbles through the lattice.
  10. Cool at least 2 hours before slicing so the filling sets.
