Ingredients

  • 2 cup cooked white or jasmine rice
  • 4 fish fillets (tilapia, cod, or mahi-mahi)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp lemon juice
  • 4 large eggs
  • 2 cup brown gravy (store-bought or homemade)
  • Optional: sliced green onions

Steps

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush fish with olive oil and season with garlic powder, paprika, salt, and pepper.
  3. Grill fish 3–4 minutes per side until cooked through and lightly charred. Drizzle with lemon juice.
  4. Warm the gravy in a saucepan or microwave.
  5. In a skillet, fry eggs to your preferred doneness.
  6. Divide cooked rice into bowls or plates.
  7. Place a grilled fish fillet over each portion of rice.
  8. Top each with a fried egg.
  9. Pour warm gravy over the stack.
  10. Garnish with green onions if using and serve immediately.
